D.I.Y. Fridays – Strawberry Balsamic Dressing

Strawberries from the Raíces Micro Farm, pollinated by our bee friends!

Strawberries from the Raíces Micro Farm in the spring of 2013, pollinated by our bee friends!

It is both strawberry season and lettuce season, and so I concocted a fresh strawberry balsamic dressing to go on my homegrown Raíces lettuce! It was beyond good! And because I love all you tree huggers, I’m sharing. You are welcome!

Ingredients
1/3 cup balsamic vinegar
1/2 cup olive oil (I used regular. I think extra virgin would taste too strong)
1/2 cup hulled strawberries
1 clove garlic
1/2 tsp dijon mustard
1/2 tsp salt
1/2 tsp sweetener of your choice (optional – the balsamic and strawberries sweeten this up pretty well)
handful fresh basil

Directions
Throw it all in the blender and mix until emulsified. I actually use an immersion blender and do it in a jar. It should keep in the fridge for about a week. Don’t let anyone see you drinking this straight from the jar… it’s that good. This is great on salad or even grilled meat or veggies! Enjoy!

Director’s Note: Hayley is a friend and supporter of Raíces as well as a local gardener, soapmaker, and homeschooler extraordinaire.  She recently posted this recipe in our Eco-Culture group on Facebook and we are reposting here on the blog to share with all of our readers.  Enjoy this dressing while strawberries and lettuce are still in season (and perhaps replace the strawberries with raspberries in just a few weeks for a new, in-season variation!) -NW
